트레이스는 2018년 10월 첫 선을 보인 후 5년동안 꾸준히 사랑받고 있는,
펀더멘탈의 첫 맥주인 해태필스너를 와인배럴에 브렛과 함께 2차 발효하여 출시되었습니다.
이로 인해 원주가 주는 쌉쌀함, 파이니함, 몰티함 등의 클래식한 느낌에 더해 브렛이 주는 야생효모의 꿈꿈함과 복합적인 산미,
오크의 우디함과 청포도의 와이니함을 담고 있습니다.
Trace is a beer brewed to celebrate the 5th anniversary of Fundamental Brewing.
This is a Barrel aged version of beloved Haetae pilsner, the very first beer of Fundamental Brewing. Aged in wine barrels with the Brett, adding the Funky complex flavours over Pilsner's bitter, piney flavours. Also with the barrel's woody,winey notes as well.

화성을 향한 인류의 도전처럼 미션헬레스 는 세계 최고의 헬레스를 만들겠다는 서울집시의 도전을 담은 맥주입니다.
몰트 마스터들이 수작업으로 하나하나 몰팅해 일반 몰트보다 훨씬 비싸지만.. 프리미엄 싱글 몰트 위스키에도 사용되는 Floor Malted Pilsner Malt를 사용해, 머랭같이 풍성한 거품, 비스킷, 꿀, graham cracker 캐릭터를 살렸고, 필터링이나 청징제 없이 오직 시간과 중력으로만 아주 오랜시간 라거링 했습니다.
물, 몰트, 효모, 홉 4가지 원재료에 대한 집착과 함께.. 매 배치마다 디테일을 업그레이드 하고있으니 언젠가 이 도전도 성공할 날이 오겠죠?

Just like humanity's challenge to reach Mars, MissionHelles is Seoulgypsy's beer that embodies the challenge to create the world's best helles lager.
Using Floor Malted Pilsner Malt, which is much more expensive than regular malt but is also used in premium single malt whiskies. This malt lends a rich, meringue-like foam, biscuit, honey, and graham cracker character. We lager it for a very long time using only time and gravity, with no filtration or clarifying agents.
With an obsession for 4 ingredients: water, malt, yeast, and hops, and with continuous upgrades to the details with each batch, we believe that someday this challenge will succeed.

이번 배치는 업그레이드한 레시피로 양조를 해서 기존 배치와는 확연히 다른 홉의 진한 아로마가 뉴잉글랜드 더블IPA다운 맥주입니다.
HBC586 홉의 망고, 구아바, 리치와 같은 열대과일의 아로마 그리고 허브, 후추와 같은 알싸함이 은은하게 느껴지고, 시트라 홉의 자몽, 감귤, 오렌지와 같은 시트러스한 아로마가 진하게 느껴지는 매력적인 뉴잉글랜드 더블 IPA입니다.

매력적인 탁한 황금빛의 외관과 고수씨앗, 오렌지 껍질의 상쾌함이 벨기에 특유의 효모향(정향,레몬 등등)과 어우려져 깔끔한 벨런스를 만들어내는 맥주입니다.

St.Bernardus Wit is a traditional unfiltered Belgian wheat beer. It was developed in collaboration with Pierre Celis, the legendary master brewer who was the driver of the resurgence of white beer in the 1960’s.
St.Bernardus Wit looks distinguished and classic with its attractive, golden-yellow colour hidden under a subtle veil – it epitomises the authentic Belgian cloudy white beer. The fresh aromas of coriander and orange are perfectly balanced with the notes of pungent clove and fruity lemon. These zingy herbs combine with the creaminess of the wheat to produce a beer that is a masterclass in balance.

Maduro is a Northern English-style brown ale with some American affectations. Maduro is higher in alcohol than the common English brown ale and features flaked oats in the malt bill which imparts a silky body and works to mesh the roasted, toasted and chocolate components together in Maduro’s complex malt profile. The end result is a remarkably full-flavored yet approachable and sessionable brown ale that pairs well with mild to medium cigars.

3년전 처음 프로방스 베케이션을 만들때에는 자연의 손맛에 베팅하는 마음으로.. 실패하면 버려야지 기도하는 마음으로 보편적으로 시도되지 않는 방식에 도전했는데요. (남들이 가지 않는 길은 항상 겁이 나는 법이죠 )
포도 껍질에 오랜 시간 버틸 수 있는 맥즙을 더해 아주 천천히 자연발효와 숙성을 거친 후, 세이보리, 오레가노, 로즈마리 등이 블렌딩 된 프로방스 허브를 더했습니다. 유독 에너제틱 했던 올해의 자연 속 효모들이 만들어낸 지난 배치보다 더 푸르티하고, 돋보이는 과실미가 매력적입니다. 매번 조금씩 다른 개성을 보여주는게 자연발효의 매력이겠죠.
In modern times, we have domesticated yeast, tailoring it to our design and intentions. Although standardized yeast ensures consistent taste and quality, it's challenging to expect the unique, spontaneous, and unpredictable terroir that comes from the unknown.
We're tapping ProvenceVacation2023, fermented in the most primitive way with yeast from grape skins.
When we first created Provence Vacation three years ago, we ventured into this unconventional method with a mindset prepared for the possibility of failure, betting on the natural process. (The road less traveled is always a bit scary )
After slowly fermenting and aging with the wort, which can withstand a long time on grape skins, we added a blend of Provence herbs including savory, oregano, and rosemary. This year's particularly energetic natural yeasts have produced a batch that is fruitier and more distinctive than the last, showcasing the charming variations of natural fermentation.

오스카 블루스 양조장은 이 기념적인 맥주의 20주년을 맞아 더블 데일즈를 출시 했습니다. 6.5도인 데일즈 페일보다 확연히 높은 9.0도의 더블(임페리얼) IPA가 탄생했는데요.
더 많은 사람들에게 신선한 크래프트 맥주를 전해주기 위해서 데일즈 페일을 캔 포장했던 마음을 담아 다시 한 번 맥주계를 뒤 흔들기위한 더블 데일즈는 이름처럼 두배의 홉으로 엄청난 체급을 자랑합니다!

2022 marks the 20th anniversary of Dale’s Pale Ale, the voluminously hopped, groundbreaking American Pale Ale that holds the distinction of being the first craft beer ever packaged in a can. To mark the milestone, Oskar Blues Brewery announces the release of Double Dale’s Imperial IPA, a double-take on the beer that started it all.
Two decades ago, Oskar Blues Brewery sent shockwaves through the beer industry when they packed Dale’s Pale Ale into a can. It was then an unheard-of packaging decision, but the reasons were obvious to the OB team: it allowed everyone to easily take craft beer on the trail AND it delivered a fresher beer. Now, Double Dale’s Imperial IPA picks up the torch, the welder, and the hacksaw to turn the industry upside down again, doubling down on hops with a newly formulated, massive IPA worthy of the legendary original craft beer in a can.
Double Dale’s is brewed with juicy, tropical El Dorado and complex Talus hops, keeping with the Dale’s tradition of utilizing only American hops. Fruity, piney flavors from the hops mingle with a caramel-driven malt bill, and the whole beast is supported by a new mineral-forward house blend of H2O, which includes six brewing salts. The result is a larger-than-life spin on Dale’s that’s just as packable, drinkable and recyclable as the original.
